The Origins of Matcha

Matcha has a rich history that dates back over a thousand years, tracing back to China during the Tang Dynasty, where tea leaves were steamed and formed into bricks for easy transport. However, it was in Japan that matcha truly flourished, whereby matcha became integral to the Zen Buddhist rituals in the 12th century. This developed into Japan’s intricate tea ceremony, or “chanoyu”, which emphasises mindfulness with a focus on the preparation and presentation of the tea. Today, matcha remains a big part of Japanese culture and has spread worldwide for its unique taste and health benefits.

The Different Grades of Matcha

Believe it or not, not all matcha is the same. It can generally be categorised into three main grades: ceremonial, premium, and culinary, of which each has its distinct characteristics and uses. It is therefore important to understand the different grades, to ensure you are using it in the right way.

Ceremonial Grade

Ceremonial grade matcha is the highest quality matcha one can buy. This grade of matcha is used in traditional Japanese tea ceremonies and is made from the youngest tea leaves, resulting in a very vibrant green colour, smooth texture, and a delicate, slightly sweet flavour. Ceremonial matcha can be enjoyed on its own or as a latte with milk. Matcha enthusiasts will argue that ceremonial grade matcha is the best way to consume matcha as a drink rather than matcha lattes using a different grade not intended for matcha lattes. The telltale sign of ceremonial matcha is its vibrant colour. If you buy a matcha that is duller in colour and tastes bitter, it’s not ceremonial grade. In fact, many people think they don’t like matcha lattes or tea, because they have been consuming the wrong grade!

Premium Grade

Premium grade matcha is a mid-tier matcha that is also made from high-quality tea leaves, however is less refined than ceremonial grade. It has a slightly more robust flavour and can also be used in lattes and tea. This grade tends to be slightly cheaper than ceremonial grade, as it is not as high-quality. However, be rest assured that you will still experience a very delicious matcha latte

Culinary Grade

The most affordable and versatile type of matcha, culinary grade matcha is made from older tea leaves. It has a duller colour and a more bitter taste and is therefore suitable for cooking and baking and perfect for adding a matcha flavour to dishes, desserts, and beverages. However, if you want to make an authentic and delicious matcha latte, culinary grade matcha isn’t the best grade to use and you won’t experience the wonderful taste of a ceremonial or premium grade matcha.

Ceremonial Matcha vs Regular Matcha

The main difference between ceremonial matcha and regular matcha lies in the quality and intended use. Ceremonial matcha, as mentioned, is of the highest quality and is used in traditional tea ceremonies and is best suited for making matcha lattes and tea. It is characterised by its vibrant green colour, fine texture, and subtle flavour. The production process is also more meticulous than lower grades, involving hand-picking the youngest leaves, stone grinding, and careful packaging to preserve its delicate qualities.

On the other hand, regular matcha, which includes both premium and culinary grades, is more versatile and accessible. While still offering the health benefits of matcha, regular matcha has a more robust flavour and can withstand the addition of sweeteners and other ingredients, making it great to use in baking.

Choosing the Right Grade of Matcha for You

When choosing the right grade of matcha for you, consider how you plan to use it. If you are new to matcha, want to enjoy it in its purest form or are just a matcha enthusiast, then ceremonial grade is the best choice as its superior quality and flavour make it perfect for traditional preparation and mindful sipping.

If you are looking for something more affordable, or enjoy matcha lattes with a hint of sweetness, then premium grade matcha will also work really well, creating a well-balanced wellness drink.

Culinary grade matcha is ideal for cooking and baking. Its stronger flavour can hold up in recipes and provides the distinctive matcha taste to a variety of dishes and bakes.
